The name “VANKA” is inspired by tomatoes.
In kanji, it consists of the characters for “eggplant” (茄子) and “foreign” (蕃).
“Eggplant” has been a symbol of culinary culture since the Edo period,
while “foreign” signifies something exotic or foreign in origin.

At VANKA,
we offer a new culinary journey where delicious ingredients from Japan’s four seasons
and traditional fermented seasonings are accentuated by the refinement of French cuisine.
